A Moment in Time, a project of The New York Times, wherein a moment of time on Sunday, May 2 at 15:00 UTC was captured – yes, that was this morning. As you can see, my moment in time was spent making breakfast of French toast – it’s not a great shot, but it is what I was doing. Probably should have set up the tripod, but that’s too much work. The project should be online starting tonight (Sunday) with some select shots from around the world, and more completely within the following week. You can read more about it here.

I was sitting here this morning, thinking about random things that are totally uninteresting so I won’t bore you with them, when it dawns on me that I forgot to prepare my Friday post last night. I totally forgot about the new schedule that I set for myself and I almost blew it, and so soon after creating it!

I’m going through my archives of images that I’ve been wanting to post and just haven’t gotten around to them, this being one of them. This was taken at Urban Oasis in Seattle, the vacation rental that my family used during our stay for N and H’s wedding – my son and his wife. They have an award winning garden that surrounds their house, which is truly beautiful and well thought out. I highly recommend it if you need a place to stay in Seattle for a few days.

Come back Sunday for my big announcement! I’m pretty excited about it and can’t wait to share the news!!

This weekend I made a couple of batches of peppermint bark – yummy!! One more batch to make and then I’ll bag it all up for some gifts and present them in a star shaped dish that I got at the dollar store. In all, each gift will cost $4, but valued at much more. It will make a nice gift for neighbors and co-workers or the random visitor that stops by.

Peppermint Bark

2 bags white chocolate chips (approximately 11 or 12 ounces each bag)

2 handfuls of peppermint candy or candy canes, crushed into 1/4″ sized pieces (place candies in a doubled up plastic bag and beat with a hammer or rolling pin)

1 capful of peppermint flavoring or to taste

Put the white chocoloate chips in a microwavable bowl and melt on high, stirring every 30 seconds. Should take 1 1/2 to 2 minutes to melt. Add in the peppermint flavoring. Holding a strainer over the bowl of melted white chocolate, pour your crushed candy pieces into the strainer and sift out the smaller pieces of candy into the chocolate, stir to mix it all together. Pour onto a cookie sheet that has been lined with parchment paper, waxed paper or aluminum foil. Spread out to about 1/4″ thick, pour your reserved large pieces of crushed candy over the top and press into the white chocolate. Cool for a couple of hours, or place in the frig for 30 minutes to quickly cool it. Break into pieces. Eat. Enjoy. Gain weight.

How are you saving money this Christmas? Got any tips to share?
